Cole Slaw

Last weekend I was craving a refreshing side dish to go along with our dinner...I decided on cole slaw! I turned to the internet and starting researching recipes. I have always liked a creamy mayonnaise based cole slaw. I was shocked when I was researching to find that there were several takes on the "KFC" cole slaw! I always loved their cole slaw so I decided to give one a try!

I found the recipe on Recipe Zaar. I really couldn't believe how much it did taste like the KFC cole slaw! It brought back all kinds of childhood memories!
KFC Cole Slaw
4 cups finely diced cabbage
1/8 cup diced carrot
1 tablespoon finely chopped onion
1/4 cup sugar
1/4 teaspoon salt
1/16 teaspoon pepper
1/8 cup milk
1/4 cup mayonnaise
1/8 cup buttermilk
3/4 tablespoon white vinegar
1 1/4 tablespoons lemon juice
Make sure the Cabbage and carrots are finely diced. (if you didn't want to worry about this you could always just buy a bag of the prepared cole slaw mix that has the cabbage and carrots.) Pour cabbage and carrot mixture into large bowl and stir in minced onions. In a separate bowl mix remaining ingredients until smooth. Pour over vegetable mixture and mix thoroughly. Cover bowl and refrigerate several hours or overnight before serving.
